The vines for this varietal cuvée grow in vineyards cultivated according to organic guidelines. The soils consist of a mix of clay, limestone and partially sandy components. This structure allows good water management and promotes ripe, aromatic grapes. Targeted canopy management ensures that the grapes receive plenty of light and air, supporting clean ripening. Harvest usually takes place in the cooler morning hours. This keeps the temperature of the grapes low and preserves the delicate aromas of raspberry and currant. Selection already begins in the vineyard. Only ripe berries are placed in small crates to avoid pressure and oxidation.
