The vines are rooted in limestone-clay soils in the Mezzane di Sotto region. After manual harvesting, the grapes are destemmed and pressed, followed by cold maceration for 48-72 hours. Fermentation lasts around 12-15 days, followed by a short secondary fermentation on the Amarone marc. This Valpolicella Ripasso is aged for 12-15 months in 250-litre French and American oak barrels. The wine is then refined for a further 6 months in the bottle.
