Vinification of L'Empreinte de Saint Mont Rouge by Plaimont The grapes for this cuvée come from the Sud-Ouest growing region, more precisely from the Saint Mont appellation. Here the vines grow on gravelly and partly sandy soils with clay components that encourage deep-reaching roots. The Atlantic-influenced climate with plenty of sunshine and noticeable nighttime cooling allows for slow, even ripening. This results in intense aromatics paired with a fresh structure. Tannat contributes power, color and firm tannins to the wine. Cabernet Sauvignon adds cassis notes, structure and fine graphite-like spice. Pinenc, also known as Fer Servadou, contributes delicate spice, red fruit and an elegant streak. The interplay of these three grape varieties creates depth, tension and a distinct profile that aptly expresses the style of Saint Mont. The harvest usually takes place in several passes to pick only perfectly ripe grapes. Selective handwork in the vineyard removes inferior berries. Only the best fruit reaches the cellar. A comparatively late harvest date brings ripe tannins and dense, dark fruit, as is typical for this region. In the cellar, Plaimont relies on careful and gentle processing. The grapes are quickly transferred to the press or fermentation tanks to avoid oxidation. A cool pre-fermentation maceration intensifies the fruit and gently extracts color and aromas from the skins. During fermentation in tank, controlled temperature management preserves aromatic freshness and prevents harsh tannins. Regular punching down of the cap ensures even extraction.
