The Dogliani San Luigi from Cascina Corte is an organic red wine made from a selection of Dolcetto grapes sourced from various vineyards located at an altitude of 400 meters with east exposure. The calcareous and tuffaceous soils, along with the variable age of the vines between 7 and 78 years, contribute to the complexity and elegance of this wine.In the winery, fermentation occurs naturally without the addition of yeasts, with manual pump-overs and no filtration or fining. The wine ages for about 10 months in steel and cement, followed by an additional 2 months of bottle aging.To the eye, it shows an intense ruby red color with violet reflections. On the nose, fresh varietal notes of red fruit and underbrush emerge, such as cherries, sour cherries, currants, and raspberries, creating a profile of remarkable intensity and clarity. On the palate, it is pleasant, played on a harmonious succession of tannic and floral sensations, making it an easy-drinking, enjoyable, and juicy wine.This red wine is ideal with appetizers based on raw meat and traditional Piedmontese vegetables, especially with summer tomato salad.
