Pagadebit Strati by Enio Ottaviani is an exquisite white wine hailing from the San Clemente hills, in the province of Rimini, from vineyards characterized by a good south-east exposure cultivated on clayey-clay soils. It is made almost entirely from Pagadebit grapes with small additions of Bombino Bianco. Both the fermentation and the ageing of the wine are carried out in concrete tanks. Straw yellow with green reflections, it smells of white flowers, aromatic herbs and white pulp fruit. A body of good structure and an excellent balance between dry and savoury perceptions provide the gustatory endowment that leads it to express itself magnificently in all its persistence. Recommended in combination with raw fish and sushi, it goes well with fresh cheeses or fried calamari.
