Fermentation starts spontaneously thanks to indigenous yeasts and takes place in both truncated French oak vats and steel tanks, accompanied by delicate manual punch-downs. The subsequent maturation phase lasts fifteen months and occurs on fine lees, with a process that splits the wine between used French oak barrels and concrete vats.
