After white vinification, the second fermentation takes place in a stainless steel tank using the Martinotti method for about 25–30 days; this is followed by 30–90 days of aging on the lees, which completes the aromatic balance and supports the continuity of the perlage.Tasting notesIn the glass, it shows a bright straw yellow color and a fine, persistent perlage.
