Edea from the Mirabella winery is a Franciacorta Brut Blanc de Blanc born from the harmonious meeting of Chardonnay and Pinot Bianco, sourced from the estate vineyards situated in the best towns of Franciacorta. The glacial morainic soil imparts freshness and a pronounced minerality to the wine, enhancing the varietal characteristics of the grapes.The winemaking process involves a soft pressing with very low yields and the separation of the musts into three fractions to ensure greater finesse and balance. Fermentation takes place in temperature-controlled concrete tanks using selected yeasts. The aging of at least 24 months on the lees helps to develop complexity and structure while maintaining a perfect balance between acidity and softness.It has a deep straw yellow color with golden reflections and opens on the nose with elegant notes of yeast, citrus, and baked bread, enriched by hints of golden apple and banana. On the palate, it is balanced, with a pleasant freshness and a medium persistence finish characterized by a delicate bitter aftertaste.Ideal when paired with shellfish, seafood appetizers, and light first courses.
