The Birbone Toscano is a bold red wine, born from the desire to rediscover Tuscany's tradition in its most authentic expression. Produced by Fattoria dei Barbi, it is the result of careful viticulture and a suited terroir, which gives the wine a strong personality.Made from a blend primarily of Sangiovese and partly of Merlot, the grapes come from the vineyards of Tenuta Aquilaia dei Barbi in Scansano and Fattoria dei Barbi in Montalcino. After a 12-13 day alcoholic fermentation at controlled temperature, the wine undergoes malolactic fermentation and ages for 12 months in medium and small barrels, achieving a perfect balance.Of intense ruby red color, the nose offers an aromatic complexity characterized by notes of cherry and blackberry, sweet spices, tobacco, and licorice. On the palate, it is dry and warm, with tannins that are constantly evolving, providing structure and elegance. The finish is long and harmonious, with a pleasing persistence.It pairs perfectly with roasted and grilled red meats, aged cheeses, and casserole dishes, enhancing their flavors with its richness and depth.
