Sensoinverso Nero d'Avola dell'Abbazia Santa Anastasia is a red wine made with 100% Nero d'Avola grapes from biodynamic agriculture. The vineyards are located in Castelbuono at an altitude of 400 meters above sea level. The harvest is done manually ensuring the selection of the best grapes for this certified organic wine. Traditional red winemaking takes place in concrete tanks, without the use of selected yeasts, enzymes or clarifying agents, at a controlled temperature that does not exceed 28°C. The wine is not filtered and the sulfur content is almost absent. The process includes a 30-day maceration on the skins. The wine is aged for 12 months in oak barrels, followed by a further 36 months in the bottle. This wine has an intense ruby red color with purple reflections. On the nose it is fragrant and decisive, with aromas of raspberry, blackberry, cherry and black mulberry, accompanied by floral notes of violet, rose and orange blossom. Spices, including licorice, cinnamon and mace flowers, enrich the bouquet. On the palate this red wine is fresh, soft and enveloping. Perfect when paired with red meat, game, risottos and mature cheeses.
