Vinification of the Rosso Toscana from Santa Cristina The elegant Rosso Toscana from Italy is a cuvée made from the Cabernet Sauvignon, Merlot, Sangiovese and Syrah grape varieties. When they are perfectly ripe, the grapes for the Rosso Toscana are harvested exclusively by hand without the help of coarse and less selective machines. After the harvest, the grapes are immediately taken to the winery. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks and small wooden barrels at controlled temperatures. Once fermentation is complete, the Rosso Toscana can continue to harmonize on the fine lees for a few months.
