Vinification of Chatzigeorgiou Limnia Ghi This white wine clearly focuses on a single grape variety, namely Muscat d’Alexandrie. For this exceptionally well-balanced varietal wine from Chatzigeorgiou, only immaculate harvested grapes were used. The grapes grow under optimal conditions in the Northern Aegean. Here, the vines sink their roots deep into soils of volcanic rock. After harvest, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation is complete, Limnia Ghi can continue to harmonize for several months on the fine lees.
