Hints of pineapple and blackcurrant appear once again. Vinification of the Gerard Bertrand Change Merlot This well-balanced red wine from France is organically produced from the Merlot grape variety. At optimal ripeness, the grapes for the Change Merlot are harvested exclusively by hand, without the use of coarse and less selective machinery. After harvesting, the grapes are brought to the winery as quickly as possible. There they are selected and gently crushed. This is followed by fermentation in stainless steel tanks and large wooden vats at controlled temperatures. After the end of fermentation, the Change Merlot can continue to harmonize for a few months on the fine lees.
