The strong temperature differences between warm days and cool nights encourage slow ripening and preserve the natural freshness of the grapes. In this region, Pinot Grigio shows a particularly elegant expression. The grapes ripen fully, develop dense aromas and at the same time remain precise and taut. The winery places great value on selective harvesting. As a rule, the harvest takes place in the early morning hours so that the grapes arrive cool at the winery.
