Production of Armilla Blanc de Noir MCC by Avondale The grapes for this Blanc de Noir come from carefully tended vineyards around Paarl in South Africa’s Western Cape. The area lies slightly inland, but benefits from cool Atlantic breezes that provide freshness at night. Warm days promote ripe aromas, while the nights preserve the fine acidity. The soils of weathered granite, slate and sandy components create precise minerality and clear structure in the wine. Pinot Noir is considered a demanding grape variety, but in return shows a unique spectrum of aromas. For this Blanc de Noir, Avondale uses grapes with high aromatic ripeness but moderate sugar content. This later results in an elegant Brut style. Harvesting is selective and takes place in the cool morning hours in order to bring the grapes fresh into the cellar. Only ripe berries are processed. In the cellar, the team relies on gentle methods. The whole bunches go directly into the press. Very careful pressing limits colour extraction from the Pinot Noir skins, so the cuvée remains delicately straw yellow in the glass despite the red variety. The must clarifies naturally at cool temperatures before the first fermentation begins. This takes place in temperature-controlled stainless steel tanks to preserve fruit, freshness and the clear stylistic character of the grape variety. After the first fermentation, the wine is bottled together with yeast and an adjusted tirage liqueur. This is where the second fermentation begins according to the traditional method, known in South Africa as Méthode Cap Classique. In this phase, the fine mousse is created that shapes the character of the wine. The long months on the fine lees in the bottle develop notes of brioche, toast and nuts and give the sparkling wine more fullness and complexity.
