The grapes grow under optimal conditions in Piedmont. The vines here root deeply into flinty soils. When they are perfectly ripe, the grapes for the Lessona are harvested exclusively by hand without the aid of rough and minimally selective harvesters. After the harvest, the grapes are quickly brought to the cellar. Here, they are sorted and gently crushed. The fermentation then follows in large wooden vats at controlled temperatures. The vinification is followed by a few months of maturation on the fine lees before the wine is ultimately racked off.
