Vinification of the Lugana from Casello Bondoni The basis for the balanced Lugana from Lombardy are grapes from the Trebbiano grape variety. After the grape harvest, the grapes are transported to the press house as quickly as possible. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. At the end of this process, the Lugana can continue to harmonize on the fine lees for a few months.
