Vinification of the Baronesque Cuvée Noble by Bernard Massard The basis for the balanced Baronesque Cuvée Noble from the Languedoc are grapes from the grape variety Alicante Bouschet. After the hand harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. At the end of fermentation, the Baronesque Cuvée Noble is left to mature on its fine lees for several months.
