The finish is also accompanied by mineral notes from the marl and clay-dominated soils. Vinification of Barolo by Prunotto This balanced Barolo from Italy is a single-varietal wine made from the Nebbiolo grape variety. The grapes grow under optimal conditions in Piedmont. Here, the vines dig their roots deep into soils of limestone, clay and marl. Barolo is an Old World wine in the best sense of the word, as this Italian wine exudes an extraordinary European charm that clearly underlines the success of wines from the Old World. The fact that Nebbiolo grapes thrive in a rather cool climate also has a major influence on the ripeness of the grapes. Among other things, this results in particularly long and even grapes and a rather moderate alcohol content in the wine. Once perfect physiological ripeness is ensured, the grapes for Barolo are harvested exclusively by hand without the help of coarse and less selective machines. After harvesting, the grapes are immediately taken to the winery. Here they are selected and carefully broken up. Fermentation then takes place in large wooden vats at controlled temperatures. At the end of fermentation, the Barolo is aged for another 30 months in French and Slavonian oak barrels. The ageing in wooden barrels is followed by a long maturation in the bottle, which makes this red wine even more complex. Dining recommendation for the Barolo from Prunotto Ideally, drink this red wine from Italy at a temperature of 15 - 18°C as an accompaniment to stuffed peppers, ossobuco or boeuf bourguignon.
