Ferrari's Trento Riserva Perlé Bianco comes from mountain vineyards located in the most suitable areas of Trentino. It is produced exclusively from Chardonnay grapes, with careful selection in the vineyard so that the bunches are able to withstand a long aging. In fact, a traditional white vinification is followed by second fermentation, according to the Classic Method, with aging on the lees for more than 96 months. Characterized by a straw yellow color with golden reflections and a fine and persistent perlage, it opens up to the nose with a full-bodied bouquet, in which fruity notes of candied cedar and quince alternate with floral sensations and spicy bread. The taste is fresh and savory, with a finish that wraps around hints of white pepper and dehydrated apricot. Bubbly throughout the meal, it marries beautifully with fish and shellfish dishes.
