The Scoglio Nero white wine from the Isola nel Giglio estate was born from the project of Philippe Austruy, a French entrepreneur who already owned Château Peyrassol in Provence. The wine is produced with 100% Ansonica grapes, grown on granite sand soils dating back 5 million years. The climate is arid Mediterranean with little rainfall during the vine growing season. After manual harvesting in the first ten days of September, the grapes are destemmed and fermented without pressing in steel containers at a controlled temperature. Maceration continues throughout the alcoholic fermentation phase and can continue during refinement on the fine lees. A part of the wine matures in second and third passage barriques, while the other part ages in stoneware containers, guaranteeing the right micro-oxygenation. Ansonica “Scoglio Nero” presents itself with a brilliant golden yellow and amber reflections. On the nose it offers notes of Mediterranean scrub, yellow flowers, helichrysum, chamomile and candied fruit, with an elegant woody note. On the palate it is full and full-bodied, with a harmonious tannic matrix. The slightly bitter finish introduces mineral and savory hints, leaving the mouth dry and clean. It pairs perfectly with mature cheeses with a strong flavor and robust fish-based dishes such as Cacciucco, octopus stew and spaghetti with sea urchins and bottarga.
