The Notte Rossa Rosé Extra Dry Sparkling Wine is composed of a blend of red grapes from Salento, which mature on clayey soils located at approx. 100 masl After the grape harvest at the end of August, the grapes undergo soft pressing and the juice thus obtained ferments at a low temperature. The second fermentation takes place in a pressurized tank according to the Charmat method, where the wine remains on its lees for about a month, and then continues its refinement in the bottle. The wine appears in the glass of a pale pink colour, while on the nose there are citrus notes and small red fruits. The sip is full-bodied, with a lively freshness. Ideal as an aperitif, it goes well with fish and vegetable dishes.
