The Senior Port - NiepoortThe Senior Port from Niepoort is vinified from Sousão, Tinta Amarela, Tinta Cão, Tinta Francisca, Tinta Roriz, Touriga Francesa, Touriga Nacional and other red Portuguese grape varieties. In the glass it shines in a wonderful brick red with orange highlights. The expressive bouquet is dominated by red and dried fruits. Wild berries and delicate cherry aromas in particular come to the fore. Through slow maturation in wooden casks, a noble and refined Port is created that delights with a varied play of aromas. The older wines give this Port its wonderful structure, while the blending with younger wines provides freshness and complexity. The finish offers an outstanding length. Vinification of Niepoort Senior Port The grapes are carefully hand-picked from over 30-year-old vines in the single vineyards Vale do Pinhão and Ferrão. The harvested fruit is then traditionally foot-trodden in lagares and fermented in them. This Port wine is aged for seven years in traditional pipas, which are wooden casks with a capacity of 550 liters that allow for a lively exchange of air. In this way, a well-measured oxidation can develop, which imparts the Port’s special aromas. Food recommendation for Port Senior Niepoort A wonderful companion to robust, spicy cheeses such as Stilton or Roquefort, or to dried fruits, crème caramel, apple pie and foie gras terrine. This Port wine is also a delight to drink on its own as an aperitif.
