Vinification of Monte Zovo Le Civaie Lugana This white wine clearly focuses on a single grape variety, namely Trebbiano. Only immaculate grape material was used for this wonderfully balanced varietal wine from Monte Zovo. In Veneto, the vines that produce the grapes for this wine grow on clay and sand soils. After hand harvest, the grapes are quickly brought to the winery. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation, the wine matures for several months on the fine lees before it is finally bottled.
