The Extra Brut Cuvée Zero Quality Sparkling Wine from Cascina Chicco is made exclusively with Nebbiolo grapes, the main grape variety of the Piedmont region. The manual harvest is followed by soft pressing and fermentation in steel at a controlled temperature. Subsequently, the fermentation takes place through second fermentation in the bottle and aging for 36 months on its own yeasts. It has a straw yellow color and a very fine and persistent perlage. On the nose, aromas of bread crust, almond and citrus fruits emerge, which herald a delicate, elegant and persistent palate. Ideally paired with risottos and seafood first courses, as well as light appetizers.
