Vinification of Sassotondo Isolina The starting point for the first-class and wonderfully balanced cuvée Isolina of Sassotondo are Greco Bianco, Sauvignon Blanc and Trebbiano grapes. In Tuscany, the vines that produce the grapes for this wine grow on soils of volcanic rock. After harvesting, the grapes quickly reach the winery. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. Once fermentation is complete, the Isolina can continue to harmonize on the fine lees for a few months. Recommended Serving Sassotondo Isolina This Italian is best enjoyed well chilled at 8 - 10°C. It is perfect as an accompanying wine to asparagus salad with quinoa, spinach gratin with almonds, or roasted trout with ginger pear.
