The grapes grow under optimal conditions in Umbria. The vines dig their roots deep into clay soils here. Once the perfect physiological ripeness is ensured, the grapes for the Montefalco Grechetto are harvested exclusively by hand, without the aid of coarse and non-selective mechanical harvesters. After picking, the grapes are promptly transported to the pressing house. Here, they are sorted and gently crushed. Subsequently, fermentation takes place in stainless steel tanks at controlled temperatures. After the fermentation is complete, the Montefalco Grechetto can continue to harmonize on the fine lees for several months.
