The nose is dominated by the most intense notes of ripe berry fruits, first and foremost blackberries, blueberries and red currants. After harvesting, they are destemmed and crushed. After a certain maceration period, the Papale Primitivo di Manduria moves to the fermentation tanks at 26-28°C. After fermentation and biological acid transformation, Varvaglione Papale is bottled in French oak barrels, where it is then left to refine for 8 months.
