On the palate, Anthonij Rupert Wyne's Optima opens delightfully dry, grippy and aromatic. There is dry and really dry. This red wine belongs to the latter group, as it was bottled with only 2.2 grams of residual sugar. With its present fruit acidity, the Optima is wonderfully fresh and lively on the palate. Vinification of the Optima from Anthonij Rupert Wyne The basis for the powerful Optima from the Western Cape are grapes from the grape varieties Cabernet Franc, Cabernet Sauvignon and Merlot. The fact that the Cabernet Franc, Cabernet Sauvignon and Merlot grapes thrive under the influence of a warm climate has an influence on the ripening of the grapes that cannot be dismissed. This manifests itself, among other things, in particularly well ripened grapes and rather high alcohol content in the wine. After harvesting, the grapes are taken to the press house as quickly as possible. Here they are sorted and carefully broken up. Fermentation follows in large wood at controlled temperatures. After the end of fermentation, the Optima is aged for several months in French oak barrels. The aging in oak barrels is followed by a long aging in bottle, which makes this red wine even more complex.
