Vinification of the Rubesco Vigna Monticchio Torgiano Rosso Riserva DOCG Tenuta di Torgiano Vigna Monticchio is a single vineyard on the Brufa hill, at 300 meters above sea level, 15 hectares, of which only 12 hectares are used for the production of Rubesco Riserva Vigna Monticchio. The Sangiovese grapes grow on a very variable soil, in which marl, clay and sandy layers alternate several times. The grapes are harvested by hand at the beginning of September. Mash fermentation on the skins takes place in stainless steel tanks for 25 to 28 days, after which the wine is aged for a year in oak barrels and barriques. After light filtration and bottling, the wine matures for a further 5 years in the bottle before being marketed. The Rubesco Riserva is an exclusive Rubesco selection from the vineyard of the same name and the flagship of the Lungarotti winery in the world. For years, it has been one of the best wines in Italy, the highest expression of the Umbrian terroir, the landscape and the people of this region. The DOCG for this wine was awarded in 1990 and retroactively extended to the entire production from 1983 onwards.
