When they are perfectly ripe, the grapes for the Sauvignon Blanc Fumat Collio are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After manual harvesting, the grapes are immediately taken to the press house. Here they are selected and carefully crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures.
