Vinification of the Moinante Rosé from Mainova The basis for the elegant Moinante Rosé from Alentejo are grapes from the grape variety Castelão. The ripeness of the grapes for this wine from Castelão is influenced to a considerable extent by the climate of the growing region. In Alentejo, the grapes thrive in a warm climate, which is reflected, among other things, in particularly well ripened grapes and a rather high must weight. After the hand harvest, the grapes reach the winery by the fastest route. Here they are selected and carefully broken up. Fermentation then takes place in small wood at controlled temperatures. After the end of fermentation, the Moinante Rosé is aged for several months in oak barrels.
