Vinification of the Kirchner Auxerrois The balanced Auxerrois from Germany is a single varietal wine, vinified from the Auxerrois grape variety. When perfectly ripe, the grapes for the Auxerrois are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After the harvest, the grapes reach the press house by the fastest route. Here they are sorted and carefully broken up. Then the fermentation takes place in the controlled temperature. Food recommendation for Kirchner Auxerrois This German wine is best enjoyed moderately chilled at 11 - 13°C. It is perfect as an accompaniment to spaghetti with caper and tomato sauce, chickpea curry or pasta with sausage dumplings.
