Vinification of the Malvasia Didyme Salina IGT from Tenuta Capofaro by Tasca d'Almerita Didyme is the ancient name of the island. The Tasca d'Almerita family owns Tenuta Capofaro on the small Isola di Salina, which is part of the Aeolian Islands, and has been exploiting the potential of the volcanic soil to grow the Malvasia grape variety for many years. The optimal degree of ripeness and the clean vinification of this dry white wine underline the high quality of Tasca wines. The grapes are harvested manually and fermented in stainless steel tanks at a controlled temperature and matured dry. Malolactic fermentation does not take place. The wine then matures in stainless steel tanks for 4 months on the fine lees.
