The nose of this wonderful white wine from South Tyrol reveals expressive aromas of gooseberry, fresh figs and elderflower - accompanied by subtle hints of nettle. On the palate, Castelfeder Raif is a wonderfully juicy and fruity Italian white wine with a harmonious yet energetic character that is perfectly expressed in its mineral acidity. The gentle finish is accompanied by fine floral nuances. Vinification of the Raif Sauvignon from Castelfeder The grapes for this classic South Tyrolean white wine come from selected vineyards in the South Tyrolean lowlands, where Castelfeder has planted on sandy gravel soils with a density of 5,000 - 7,500 vines per hectare. After hand-picking the grapes from the 15 to 20-year-old Sauvignon Blanc vines, they are crushed and subjected to cold maceration for 12 hours to extract a particularly large amount of aromas from the skins. After gentle pressing, alcoholic fermentation takes place in stainless steel tanks, followed by a six-month maturation of the Raif Sauvignon Blanc on the fine lees.
