Vinification of the San Vincenzo Bianco Veneto IGT from Anselmi San Vincenzo is Anselmi's most popular wine. It is vinified from 70% Garganega, 15% Chardonnay and 5% Sauvignon Blanc. The grapes thrive on the typical volcanic and calcareous soils of the Soave region, and the location near the shrine of San Vincenzo gives its name to this popular white wine. The Garganega vines grow on the slopes, while the remaining grapes are harvested in the valley. The manually harvested grapes are destemmed and gently pressed. After a short maceration period, the must is slowly fermented with its own yeasts at a controlled temperature. It then matures for 6 months in stainless steel tanks. Using the battonage method, the wine is stirred regularly, which gives it more depth and character.
