The grapes grow under optimal conditions in Tuscany. Here, the vines dig their roots deep into soils of limestone, clay and marl. The grapes for the Campo ai Sassi Rosso di Montalcino are harvested exclusively by hand at optimum ripeness, without the aid of coarse and less selective machinery. After manual harvesting, the grapes are immediately taken to the press house. Here they are sorted and carefully crushed. This is followed by fermentation in small wooden vats at controlled temperatures. At the end of fermentation, the Campo ai Sassi Rosso di Montalcino is aged for 12 months in Slavonian oak barriques. The ageing in the barrel is followed by considerable ageing in the bottle, which makes this red wine even more complex.
