Vinification of the Chardonnay Estate by Wakefield The grapes for this elegant, single varietal Chardonnay from Wakefield are harvested from the estate's own vineyards in Clare Valley during the cool night hours and brought directly to the winery to preserve the delicate aromas. There they are quickly chilled and all the fruit is pressed. After a short resting period, the juice is put in French oak barrels, 10% new barrels, 20% in one year old barrels and the rest in barrels 2 and 3 years old. A small percentage of the grape must is fermented in stainless steel. All portions are left on the lees for 4 months after fermentation. Only then are they blended and stabilized. Finally, the finished wine rests in stainless steel tanks for a certain period of time before being drawn into the bottle in the fall.
