On the nose, it presents beautiful aromas reminiscent of vanilla and lime blossom. On the palate, this Pinot Grigio from Collio is dry, firm, full-bodied, round and melting, with a long, persistent finish. Vinification of the Pinot Grigio Collio DOC from Livon The grapes for this single-varietal Pinot Grigio grow in the vineyards in the municipality of Dolegna del Collio, on clayey marl soils of oceanic origin. The grapes are harvested exclusively by hand, cold macerated in the horizontal press for eight hours and the must is then clarified by natural decantation. The subsequent fermentation takes place entirely in stainless steel tanks at a controlled temperature of 18°C and remains in the same containers for 5 months to mature at a constant temperature. After bottling, the wine is stored in the bottle for some time before being released for sale. It can be stored for 4 to 5 years.
