The nose reveals aromas of blackcurrant and plums, Mediterranean herbs and sweet spices such as cinnamon and nutmeg, as well as liquorice and tobacco. The wine has an impressive structure on the palate, with ripe tannins and very well-integrated, firm acidity, as well as a velvety, soft texture, both of which make for a truly lasting taste experience. Vinification of the Senes Cannonau di Sardegna Riserva from Argiolas The name Senes comes from Latin and means the old ones , the wine is a tribute to the patriarch of the winery and his 102 years. For this Cannonau Riserva, 100% Cannonau grapes are vinified, the autochthonous Sardinian vine that grows in the south of Sardinia in the vineyards of the Costera estate owned by the Argiolas family. The soils are calcareous, partly interspersed with clay marl, mixed with small and medium-sized gravel. A Mediterranean climate with mild winters, limited rainfall and very warm and windy summers promote the growth of this ancient grape variety. For the Senes Cannonau Riserva, the grapes are macerated and fermented at a controlled temperature in stainless steel tanks after harvesting, then transferred to concrete tanks, where malolactic fermentation takes place in full. The wine is aged for 12 months in French oak barriques, followed by a further 12 months in the bottle.
