On the palate, the Bianco di Custoza from Cavalchina opens wonderfully dry, grippy and aromatic. The texture of this light-footed white wine is wonderfully crisp on the palate. On the finish, this white wine from the Veneto wine-growing region finally delights with its beautiful length. There are again hints of violets and orange blossom. Vinification of the Bianco di Custoza from Cavalchina The basis for the elegant Bianco di Custoza from Veneto are grapes from the Cortese, Garganega and Trebbiano grape varieties. The grapes grow under optimal conditions in Veneto. Here, the vines dig their roots deep into soils of clay, limestone and marl. The grapes for the Bianco di Custoza are harvested exclusively by hand at optimum ripeness, without the aid of coarse and less selective machinery. After being harvested by hand, the grapes are quickly transported to the winery. Here they are selected and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. The fermentation is followed by maturation on the fine lees for several months before the wine is finally bottled.
