The finish awaits with a wonderful length. The name Southern Right is derived from the protected Southern Right Whale that lives in the subpolar and temperate seas of the southern hemisphere. Vinification of the Southern Right Pinotage The Pinotage grapes grow in the Hemel-en-Aarde Valley, Upper Hemel-en-Aarde Valley and Waker Bay sites on soils that are rich in clay, rock and slate. Once the harvest arrives at the winery of Hamilton Russell, the grapes are fermented in stainless steel tanks. This red wine undergoes 100% malolactic fermentation. Then this wine is aged for 9 months in wooden barrels of French oak (volume 228 liters and 400 liters).
