
Bukettraube - CederbergCederberg's Bukettraube from South Africa's Western Cape wine region in Cape South Coast is a varietally pure, aromatic and balanced white wine. Vinification of the Cederberg Bukettraube The grapes for this white wine are harvested by hand from southwest-facing vineyards in the Cederberg site. After the harvest arrives at the Cederberg winery, the grapes are cold pressed and left on the skins for 8 hours. This is followed by another gentle pressing. The resulting must is fermented with selected yeast strains for about 50 days at a controlled temperature (14 degrees Celsius) in stainless steel tanks. Fermentation is stopped by the cellar master, leaving a natural residual sugar.
