The grapes of the individual grape varieties are fermented separately in stainless steel tanks and macerated for 20 days at a controlled temperature. Malolactic fermentation is carried out in concrete tanks and the wine is then transferred to barrique barrels. The wines are then aged for one year, still separated from each other and only combined before bottling. After bottling, the wine continues to mature in the bottle.
