Starting with red berries - especially currant and strawberry - through the typical vegetal notes (mint, green pepper) of Cabernet Sauvignon, to fine wood nuances, such as cedar and oak. On the palate, this French red wine also skillfully reflects the aromas of the nose and is taken by a velvety texture. The balanced tannins are pleasantly present and accompany into the long finish. Vinification of the Les Jamelles Cabernet The Cabernet Sauvignon grapes for this red wine come from vineyards at the foot of the Cevennes and in the Aude Valley. The 15-year-old vines are rooted in acidic soil rich in pebbles. Once the berries arrive at the Les Jamelles winery, they are completely destemmed. A long maceration under controlled temperature follows. During this process, the mash is regularly pumped over. This wine undergoes complete malolactic fermentation. Finally, this wine is aged for 6 months in stainless steel tanks, with 5 to 10% in oak barrels.
