Only premium grape material was used for this wonderfully balanced single varietal wine from Palliser Estate. The grapes grow under optimal conditions on New Zealand's South Island. The vines here dig their roots deep into soils of clay and gravel. When perfect physiological ripeness is assured, the grapes for Sauvignon Blanc are harvested exclusively by hand without the use of coarse and barely selective full harvesters. After the harvest, the grapes are immediately sent to the winery. Here they are selected and carefully broken up. Fermentation follows in stainless steel tanks at controlled temperatures. At the end of fermentation, the Sauvignon Blanc is allowed to further harmonize on the fine lees for a few months.
