In the glass, this wine shimmers a rich dark red with purple highlights. The nose is enchanted by an expressive bouquet. It reveals aromas of many berry fruits (especially raspberry, blackberry and cassis), complemented by floral notes of violets and a hint of oak and vanilla. On the palate, the fruity aromas develop into berry jam and ripe cherries. The rich body lets itself be taken in by the balanced tannins, giving it its complex and fruity character. The finish awaits with a pleasant length. Vinification of the Les Jamelles Pinot Noir The Pinot Noir vines, about 10 years old, grow in vineyards on the heights of the Aude Valley, in the foothills of the Pyrenees. The soil in terraced arrangement is rich in clay and limestone. After the Pinot Noir grapes are harvested, they are immediately taken to the Les Jamelles winery. There, the berries are first subjected to cold maceration for about a week. Only then does the one-week fermentation begin at a controlled temperature in stainless steel tanks. 75% of this red wine remains in the steel tanks for aging - the remaining 25% is aged in oak barrels for 6 to 9 months.
