On the palate, the Chardonnay from Bilancia opens up wonderfully aromatic, fruit-driven, and balanced. There is dry and really dry. This white wine belongs to the latter category, as it was vinified with just 0.1 g of residual sugar. On the tongue, this powerful white wine is characterized by an incredibly silky texture. Thanks to the balanced fruit acidity, the Chardonnay caresses the palate with a pleasing sensation, without sacrificing juicy vivacity. In the finish, this wine from the wine-growing region of New Zealand's North Island ultimately impresses with considerable length. Once again, hints of grapefruit and pear emerge. In the aftertaste, mineral notes from the gravel-dominated soils are added. Vinification of the Chardonnay from Bilancia This white wine clearly focuses on one grape variety, which is Chardonnay. Only top-quality grapes were used to produce this wonderfully powerful single-varietal wine from Bilancia. On New Zealand's North Island, the vines that produce the grapes for this wine grow in gravelly soils. The moderating influence of the nearby river allows the grapes to ripen more slowly and develop greater aromatic complexity. When perfectly ripened, the grapes for the Chardonnay are harvested by hand, without the assistance of coarse and poorly selective harvesters. After the grape harvest, the grapes are swiftly transported to the press house. Here they are selected and gently crushed. Fermentation takes place in small wood at controlled temperatures. After this process, the powerful Chardonnay is aged for an additional 11 months in barrels made of French oak.
