Vinification of the Chardonnay from La Source The balanced Chardonnay from Italy is a single-varietal wine, pressed from the Chardonnay grape variety. The grapes grow in optimal conditions in the Aosta Valley. The vines here dig their roots deep into soils of sand. After manual harvesting, the grapes reach the winery by the fastest route. Here they are sorted and carefully crushed. Then fermentation takes place in stainless steel tanks at controlled temperatures. After the end of fermentation, the Chardonnay can further harmonize on the fine lees for a few months. Serving recommendation for La Source Chardonnay This Italian white wine is best enjoyed well chilled at 8 - 10°C. It is perfect as an accompaniment to coconut-lime fish curry, omelet with salmon and fennel, or leek tortilla.
