Vinification of the Pascal Bouchard Chablis This white wine clearly focuses on one grape variety, and that is Chardonnay. For this exceptionally balanced varietal wine from Pascal Bouchard, only first-class grapes were harvested. After harvesting, the grapes are immediately taken to the winery. Here they are sorted and carefully crushed. Fermentation follows in stainless steel tanks at controlled temperatures. Fermentation is followed by aging on the fine lees for several months before the wine is finally bottled. Food recommendation for the Chablis of Pascal Bouchard This French wine is best enjoyed well chilled at 8 - 10°C. It is perfect as an accompanying wine to potato pan with salmon, cabbage roulades or spaghetti with caper and tomato sauce.
